Meet Juan Zayas of Pennsylvania

Today we’d like to introduce you to Juan Zayas.

Hi Juan, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
I started working in a kitchen when I was 14 years old, and from the moment I stepped behind the line, I fell in love with cooking. My journey wasn’t always easy—I went through some rough patches in my life that could have defined me, but I made the decision to change my life for the better. That choice transformed not only who I am as a person but also my career. Through hard work, determination, and a passion for the craft, my career took off and opened doors I never imagined possible.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
It definitely hasn’t been a smooth road. There was a time in my life when I struggled with alcohol, experimented with drugs, and made choices that led me into trouble. Those experiences were difficult, but they became a turning point for me. When I truly committed myself to cooking, everything began to change.

The kitchen gave me purpose, discipline, and something to be proud of. It didn’t just make me a better chef—it made me a better father, a better husband, and a better family member. Cooking became more than a career; it became the foundation for rebuilding my life and proving to myself that your past doesn’t have to define your future.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
It’s hard for me to define my work by just one specialty because my experience is so diverse. My love for cooking began when I was about six years old, learning alongside my grandmother in the kitchen. Those early memories shaped the way I think about food—not just as something to eat, but as a way to bring people together.

Professionally, I started at the very bottom as a dishwasher and worked my way through every station in the kitchen before becoming an Executive Chef. That journey gave me a deep understanding of every role and taught me to respect every member of the team because I’ve been in their shoes.

Today, I’m known for creating memorable dining experiences, mentoring my staff, and leading by example. I’m proud of the career I’ve built, but I’m even more proud of the person I’ve become along the way. What sets me apart is that I never forget where I started. I combine traditional techniques with creativity, and I believe the best leaders are the ones who continue learning, inspire others, and help the next generation of cooks grow.

We love surprises, fun facts and unexpected stories. Is there something you can share that might surprise us?
I think what surprises people most is that my passion for learning goes far beyond food. I’m naturally curious, and I love understanding how things work—not just in the kitchen, but in life. I have a strong ability to retain information and then explain it in a way that’s easy for others to understand, often using metaphors and stories that make the lesson more relatable.

People are also surprised by my journey. I grew up in Puerto Rico, speaking Spanish as my first language, and today I’m an Executive Chef leading teams, creating menus, and mentoring others. My background has taught me resilience, adaptability, and the importance of never stopping learning. I believe knowledge only becomes valuable when you share it, and that’s something I try to do every day.
