Today we’d like to introduce you to Denise Gesek.
Hi Denise, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
Chef Denise’s culinary journey began in her grandmother’s South Philadelphia kitchen, where her Italian grandparents taught her the meaning of hard work, discipline, and pride in one’s craft. Their successful family business and dedication to quality shaped her values and fueled her passion for cooking.
Denise is a classically trained chef, graduating from Johnson & Wales University in Rhode Island. She launched her career in Boston, working under celebrated chefs Jasper White and Lydia Shire, as well as restaurateur Frank DePasquale. Her time on the West Coast further expanded her culinary perspective, blending European influences with California creativity.
Returning home to South Philadelphia, Denise continued her career in restaurants and hotels throughout the region. Today, she brings her experience, travels, and personal heritage together at Insatiable, where her menu reflects a modern, inspired take on European and American classics.
For Denise, it has always been about the food — and the belief that you should strive to be the best in your craft and never give up on your dream.
We all face challenges, but looking back would you describe it as a relatively smooth road?
One of the biggest obstacles I’ve faced with Insatiable has been building and growing a chef‑driven brand while navigating the realities of running a small business. As a neighborhood restaurant, we’ve had to overcome everything from operational hurdles to unexpected setbacks behind the scenes. There have been challenges with the building, infrastructure issues, and moments where things simply didn’t go as planned — but each obstacle pushed me to become more resourceful, more determined, and more committed to what Insatiable stands for.
Another challenge has been educating guests about what makes Insatiable different. We’re not a corporate concept — we’re a true chef‑crafted brand. Everything is made with intention, technique, and passion, and sometimes that means working harder to show people the value of real food made from scratch. But that challenge has also become one of our strengths: people feel the authenticity when they dine with us.
I’m proud that despite every obstacle, Insatiable has stayed true to its identity. We’ve built a loyal following, created a menu that reflects my life and training, and established a brand rooted in passion, creativity, and perseverance. Every challenge has shaped us into a stronger, more focused business — and it’s part of what makes Insatiable special.
Appreciate you sharing that. What should we know about Insatiable?
Insatiable is a chef‑driven restaurant built on passion, heritage, and craft. We specialize in elevated comfort food inspired by my European travels, my classical training, and the countless hours I spent cooking in kitchens across the United States. What we’re known for is taking familiar dishes and giving them a fresh, creative twist — something that feels both nostalgic and new at the same time.
What sets Insatiable apart is that everything on our menu is rooted in real culinary technique. I’m a classically trained chef, and I bring the discipline, precision, and creativity I learned in Boston, California, and Philadelphia into every dish we serve. Our flavors come from experience — from working under renowned chefs, from traveling, and from growing up in a South Philadelphia Italian family where food meant everything.
Brand‑wise, I’m most proud that Insatiable reflects authenticity. It’s not a concept created in a boardroom — it’s a restaurant built from my personal story, my training, and my love for cooking. We focus on quality ingredients, thoughtful preparation, and dishes that make people feel something. Whether it’s our smash burgers, cutlets, shakes, or our seasonal specials, everything is made with intention.
What I want readers to know is simple: Insatiable is a place where passion meets comfort. We offer chef‑crafted food in a welcoming neighborhood space, and we’re committed to giving our guests something memorable every time they walk through the door. For us, it’s all about the food — and creating a brand that celebrates hard work, creativity, and never giving up on your dream.
We’d love to hear about any fond memories you have from when you were growing up?
My favorite childhood memory is standing on a little stool in my grandmother’s South Philadelphia kitchen, where I spent every summer living with her. She was Italian, and her entire world revolved around food, family, and tradition. I watched her tend to her tomato and basil plants outside, then turn those ingredients into homemade pasta, sauces, and dishes that felt like magic to me. She taught me everything — how to knead dough, how to taste with intention, and how to cook with love.
Those moments in her kitchen shaped my entire life. They’re the reason I became a chef, the reason I fell in love with food, and the reason my philosophy today is rooted in passion, authenticity, and honoring where you come from. Everything I do in my career traces back to that stool, that kitchen, and the lessons she passed down to me.
