Inspiring Conversations with Dallas Jones of Love Birds Coffee

Today we’d like to introduce you to Dallas Jones.

Hi Dallas, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
I’m Dallas, the founder of Love Birds Coffee, and I’m born and raised right here in Pittsburgh. I grew up in Bethel Park before heading to Kent State, where I studied Fashion Merchandising. After college, I moved to New York City and spent two years working in digital marketing and graphic design.

If you had told me then that I’d eventually own a coffee business, I honestly never would have believed you. Coffee wasn’t something I was especially passionate about yet, and I definitely didn’t picture myself working behind an espresso machine.

When I moved back home to Pittsburgh, I started working at 19 Coffee Company, and that experience completely changed my perspective. It was my first real introduction to the coffee world, and it was incredibly eye-opening. I quickly realized that coffee was so much more than just a drink—it was craftsmanship, hospitality, creativity, community, and connection. The more I learned, the more I fell in love with it.

Looking back, I realized that my background in fashion, branding, marketing, and design wasn’t something I was leaving behind. It was actually preparing me to build something of my own. Fashion taught me how important storytelling, aesthetics, and creating an experience can be, and coffee gave me a whole new passion to pour those skills into.

Love Birds Coffee was born from bringing those two worlds together. I wanted to create a coffee brand that felt fresh, beautiful, and exciting—something that made coffee feel cool again while still being approachable and welcoming.

Most importantly, I wanted to build it here in Pittsburgh. This city has always been home to me, and I love the people, neighborhoods, and small businesses that make it so special. Love Birds is my way of bringing people together over great coffee and creating moments of connection in the city that raised me.

I never set out to work in coffee, but finding it has been one of the most rewarding and unexpected experiences of my life. Love Birds is the result of every chapter that came before it, and I’m incredibly grateful that this is where the journey led me.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Starting Love Birds has definitely come with its challenges. One of the biggest learning curves for me was everything that happens behind the scenes of running a business. The permit process was probably the most confusing and biggest headache, and learning how to navigate taxes, forming an LLC, insurance, health department requirements, and all the little details that come with owning a business was completely new to me.

I had experience in fashion, digital marketing, and graphic design, but I had never learned how to actually build and operate a business from the ground up. There was definitely a lot of Googling, asking questions, making mistakes, and figuring things out as I went.

But honestly, that’s been one of my favorite parts of the journey. Every challenge has taught me something new and made me more confident as a business owner. Love Birds has grown into so much more than I originally imagined, and I’m proud of how much I’ve learned along the way.

Love Birds Coffee is a modern mobile coffee experience specializing in elevated espresso drinks, signature lattes, cold brew, and creative seasonal beverages. We cater weddings, private events, corporate gatherings, markets, pop-ups, and community events throughout Pittsburgh.

We’re known for putting just as much thought into the experience as we do the coffee. From our custom cart and branding to our menus, cups, and signature drinks, every detail is intentionally designed to feel cohesive, fun, and memorable. We want people to see Love Birds and immediately feel excited to grab a coffee.

What sets us apart is our focus on making specialty coffee feel approachable, social, and genuinely fun. We’re not trying to be overly serious or traditional—we want to create an experience that feels fresh and relevant while still taking the quality of our coffee seriously.

One of the things I’m most proud of brand-wise is how recognizable Love Birds has become. I’ve put a lot of intention into creating a visual identity that feels unique and consistent, and I’m proud that the brand has become just as much a part of the experience as the coffee itself.

At the end of the day, Love Birds is about creating something people want to be a part of—not just something they want to drink.

We’d be interested to hear your thoughts on luck and what role, if any, you feel it’s played for you?
I’ve genuinely been so lucky with Love Birds. Spring and summer 2026 were my first real season of putting myself out there, taking on events, and seeing what would actually happen—and the response has honestly been better than I could have planned.

It feels like everything has started to domino. One event turns into another, someone recommends us to a friend, a brand reaches out, and suddenly opportunities are coming from places I never expected. A lot of it has been timing, but I also think there’s something really special about putting something you believe in out into the world and seeing other people believe in it too.

Love Birds wouldn’t be where it is if I were the only person who saw something in it. The people who book us, support us, share us, come back, recommend us, and genuinely get excited when they see the cart have played such a huge role in building the brand.

I’m proud of what I’ve created, but I’m equally grateful for the people who have helped give it momentum. I think that’s probably been my biggest piece of luck—finding people who see the vision and want to be part of it.
