We all face challenges, but looking back would you describe it as a relatively smooth road?
Its been smooth but with vigorous work to make sure it is. Food cost is a struggle. Lunches are a downtime which is nice for prep but hard on labor. Justin and I do a lot of morning prep and have our chefs cook in the evening. Foot traffic in a small town is tough at times but thats why we have to be inventive and unique.
Can you tell our readers more about what you do and what you think sets you apart from others?
My specialty (Jason) is working with caterings and hospitality as a general. My goal is not only to provide great food but the service needs to exceed expectations. Our skills in such have brought us a great catering following and social media precense which me and co-owner Rayanne work heavily on.
Were a scratch kitchen with emphasize on creativity and hospitality. We are almost completely different than any restaurant in the area due to our creative rotating specials and customized full service catering.
We’d be interested to hear your thoughts on luck and what role, if any, you feel it’s played for you?
I don’t know if luck is a true comparison in this. We work long nights and long days. When we opened Justin and I both worked 12-15 hour days all week with no pay. Nowadays things are much more manageable and less hours but we still work around the clock, I could be changing my baby’s diaper and duty may call whether that’s a catering inquiry, social media, or just work life things. The “luck” doesn’t just happen its worked on until its no longer luck its reward.
