Hidden Gems: Meet Albert Arslanov of PinkStack

Today we’d like to introduce you to Albert Arslanov.

Hi Albert, we’d love for you to start by introducing yourself.
Our story began shortly after we moved to the United States. My wife and I started working on food trucks owned by our relatives, traveling together to festivals and events throughout the area. That experience introduced us to the food truck industry, and we quickly fell in love with the idea of a café on wheels — being able to move around the city, become part of different events, meet new people, and bring them something they could genuinely enjoy.

Eventually, we started dreaming about having a food truck of our own. We already had experience in the industry, but we wanted to create something that felt completely ours, with its own food, personality, and recognizable concept.

One of our first big decisions was the menu. We considered many different ideas, but ultimately came back to two foods that almost everyone knows and loves: hot dogs and fries. At the same time, we didn’t want to serve just another basic hot dog or a simple side of fries. We wanted to take familiar American street food and make it more exciting with generous toppings, bold combinations, and signature items of our own.

That is how our menu of loaded fries and loaded hot dogs was born. Today, our loaded fries include Cheesesteak Fries, Chili Cheddar Fries, Buffalo Chicken Fries, and Canadian-style poutine. Our hot dog menu features options such as the Jalapeño Cheddar Dog, Chili Cheese Dog, and one of our guest favorites — the Crunchy Classic Dog, topped with crispy onions and pickles.

But it was especially important to us to create something people could only associate with PinkStack. That led to our signature PinkStack Fries and PinkStack Hot Dog. We developed the flavor combinations ourselves and, at first, definitely wondered how local customers would respond to them. One of the ingredients that became part of our signature is our bright pink pickled onions. They add a distinctive flavor while also perfectly representing the personality of our brand.

From the beginning, our goal was bigger than simply opening a food truck. We wanted to create an entire concept and an experience people would remember. Even the pink color of the truck was intentional. We spent days comparing shades before choosing the vibrant pink that now represents PinkStack. We wanted something bold, cheerful, recognizable, and impossible to miss.

We carried that concept into our drinks as well and created our signature lemonade made with real dragon fruit. We developed the recipe ourselves from scratch, aiming for something tropical, refreshing, and genuinely delicious. Its naturally vibrant pink color ended up matching the PinkStack aesthetic perfectly.

For several months, we built the business almost entirely from the ground up. When we got the truck, the inside was essentially empty, so we had to plan and build everything from the equipment to the menu and branding. We divided the responsibilities between us: my wife developed the overall concept, menu, visual identity, and social media, while I handled much of the technical work, renovations, painting, and financial side of the business. PinkStack was truly built by the two of us, and there were many long days and late nights behind what people see today.

We finally opened in the summer, with our first festival taking place in Pittsburgh’s South Side. We were incredibly nervous. It was the first time something we had spent so much time creating was being put in front of real customers. But we did it, and seeing our first customers enjoying the food and leaving with smiles made all of that work worth it.

Every event since then has continued to motivate us. We love being part of the Pittsburgh community, meeting people throughout the city, and seeing customers come back to enjoy our food.

PinkStack is a family business that the two of us built together from the ground up. That is why quality, freshness, cleanliness, and attention to every detail matter so much to us.

To us, PinkStack is about much more than serving food from a pink truck. There is a story behind it — from our first days working at festivals and dreaming about a food truck of our own to the months we spent building every detail and finally serving our first customers in Pittsburgh. We have put a piece of ourselves into everything we do, from the menu and signature flavors to the design and atmosphere.

Today, one of the most rewarding things is seeing something that once existed only as an idea become a brand that people recognize, remember, and come back to. That is what we want PinkStack to be: a brand with its own story, its own personality, and food that brings people together.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Of course, the road hasn’t always been completely smooth. Like any business, we’ve had some unexpected challenges along the way, although fortunately, we haven’t faced too many major difficulties.

A few of our most memorable challenges actually involved the food truck itself. Once, we had a flat tire during a festival, and another time, a tire blew out while we were on our way to an event. When your entire business is literally on wheels, situations like these can definitely catch you off guard. But each time, we found a solution and kept moving forward.

Another memorable challenge happened at one of our first larger festivals. We had a much bigger crowd than we expected, with a long line of people waiting to try our food. Right in the middle of the rush, we ran out of propane. We had to temporarily stop cooking while customers were already waiting for their orders.

It was definitely stressful, but giving up wasn’t an option. My husband quickly went to get more propane, came back, and we got the kitchen running again. In the end, we were able to serve everyone in line and continue the festival, and our customers left happy.

Experiences like these have really shaped the way we approach our business. You can’t prepare for every unexpected situation, especially when you’re just starting out, but we’ve learned that there is almost always a solution if you stay calm and keep going. That’s become one of our biggest principles: never give up, stay positive, and always believe that things will work out.

Thanks for sharing that. So, maybe next you can tell us a bit more about your business?
PinkStack is a family-owned food truck based in Pittsburgh, specializing in loaded fries, loaded hot dogs, and our signature fresh dragon fruit lemonade.

At the heart of PinkStack is a simple idea: taking familiar, well-loved street food and making it bold, generous, and memorable, with a strong focus on quality. Freshness, flavor, and attention to detail are extremely important to us. We believe in generous portions, flavorful combinations, and food that not only looks delicious but makes people want to come back for more.

One of the most recognizable things about PinkStack is our vibrant pink concept. From the truck itself to our signature dishes featuring pink pickled onions and our dragon fruit lemonade, every detail is connected and contributes to the personality of the brand. We wanted PinkStack to be something you could spot from a distance and remember after you’ve tried it.

What we’re most proud of is that we built this business together from the ground up. In a relatively short amount of time, the two of us took PinkStack from an idea and an empty truck to a fully operating brand. We’ve put an incredible amount of our own work, time, creativity, and heart into it, which is why PinkStack means much more to us than simply running a business.

Today, we take PinkStack throughout Pittsburgh and the surrounding areas, serving at festivals and community events as well as private parties and celebrations. One of the things we love most about having a food truck is being able to go somewhere new, meet different people, and become a small part of their events and special moments.

We want people to associate PinkStack with a fun, memorable experience, generous and delicious food, quality, and good energy — Pink food. Big flavor. Good vibes.

Is there any advice you’d like to share with our readers who might just be starting out?
Our biggest advice is not to wait for the perfect moment and not to be afraid to start and take risks. It’s impossible to plan for everything in advance — so much of what you need to know, you learn along the way. Mistakes and unexpected situations will happen, but the most important thing is to keep going, find solutions, stay positive, and never give up.
