Today we’d like to introduce you to David Knight.

Hi David, we’d love for you to start by introducing yourself.
Chef David Knight’s heart and soul is ingrained in the culinary field. He has over 30 years’ experience as a professional chef, chef instructor and business owner. His vast experience in culinary and pastry, and diverse background has shaped him into the versatile and experienced Executive Chef/Business Owner he is today.

Chef David has worked in upscale and high-end restaurants, country clubs and culinary schools throughout Arizona, Colorado, Maryland, Vermont and Washington D.C. He has cooked for celebrities and dignitaries including President George Bush Sr., President Bill Clinton, President Barack Obama, members of the Secret Service Detail, Jacques Pepin, Roland Mesnier, Willie Nelson, Ricky Schroeder, Juliette Binoche, Albert Kumin, the New York Giants, Iowa Hawkeyes basketball team, Colorado Governor John Hickenlooper and Senator Mark Udall.

Chef David has a proven reputation with a solid work ethic, a wide body of knowledge in the science and physics of food and is well-versed in fine dining preparation and delivery. Dave has complimented his leadership experience with over 20 years combined service in the US Army, Navy, and Search and Rescue teams and Back-of-the-House (BOH) management experience.

​Chef David was featured in a 12-episode Sweet and Savory culinary cooking show on Eat-This-TV network, The Latest Dish and FSR magazine for his winning recipe with the Idaho Potato Commission and most recently has been featured on WNEP-16 news station. He has won numerous culinary awards:

Chef David moved to Pennsylvania in 2023 to be closer to his family and opened The Village Baker in August 2025 to continue his dream of bringing freshly baked, locally sourced, unique flavor combination delicacies to the community.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Because Chef David owned a bakery in Colorado, opening The Village Baker was a 2.0 adventure. We slowly introduced the staple items that would remain on the daily menu and over time have introduced the specialty and custom items from French macarons to wedding cakes. As one of Chef’s values is community, it has been easy to develop ways to adjust the items in the case to the community’s tastes and wants (Pennsylvania LOVES their peanut butter and chocolate combinations!) while still maintaining the quality and how he wants to present his baked goods and utilize his training, recipes, designs and clean ingredients (no shortening … all butter in his bakery!)

Can you tell our readers more about what you do and what you think sets you apart from others?
Chef David strives to use local sourced ingredients whenever possible while using a farm-to-table motto with his European influenced in baked goods, He does NOT bake and freeze, makes small quantities from scratch every day (yes, we sell out!) and specializes in creating delicate designs, teaching and utilizing his knowledge about the physics and science of food and why foods cook.

He is most known for using only butter in his baked goods and icings (NEVER shortening), using less sugar and highlighting and balancing the flavor of the ingredients and his 200-year-old Swiss butter cream recipe that completes every cake he creates.

He is most proud of celebrating his first year with this bakery and is honored to have had so much positive engagement with the community. He is overwhelmed by the support!

The Village Baker does not use gimmicks, is not home based, the menu is “only limited to your imagination”, can make anything special ordered and is the only bakery that uses butter. These core values and practices set The Village Baker and Chef David apart from the other businesses within 30 miles. Some of the requests he has received from his customers are French Merveilleux, Italian Wedding Cake, Gluten Free Breads, Fresh Mozzarella (that he makes himself!), Erie PA Pepperoni Balls, Heirloom Tomato Puff Pastry, Raisin Egg Bread and specialty decorations on cakes from a Highland Cow Birthday Cake to Frog Cupcakes.

Alright so before we go can you talk to us a bit about how people can work with you, collaborate with you or support you?
The Village Baker currently collaborates with local artists and offers consignment opportunities at the bakery. Chef David has an “open-door” policy and welcomes customers to give him a call if they are looking for baking advice, have questions about his products or wants to discuss a special order.
